Venture out to E&O in Ward Centre on any balmy Honolulu evening, and you’ll see alchemists at work behind the bar. And go ahead and count. Every Master Infused Mojito gets the same treatment: eighty strokes in a silver shaker. The result? Perfection.
Dr. Joey’S 80 Stroke Master Infused Mojito

1 ounce Bacardi 8yr. Rum
1 whole island grown lime
1 tablespoon of pure granulated cane sugar
3 sprigs of fresh island grown mint
Add the rum, sugar and the squeezed pure juice of one whole lime to a full mixer cup of ice. Place the mint leaves, which have been pulled whole from the stems, over the ice and mix. Secure the mixer to the top of the mixer glass and shake vigorously in a vertical up and down motion 80 times. This will macerate the mint leaves and release the mint oil into the Mojito. Strain the contents over fresh ice into a sugar rimmed glass and garnish with a mint leaf and lime wedge.
